Apricot Coconut Balls

INGREDIENTS:

- 125g dried apricots (chopped)

- 1/2 cup water

- 1/2 cup organic honey

Place these ingredients in a saucepan and simmer for 10mins until a creamy texture is reached.

Then in a bowl, combine:

​

- 1/3 cup almond meal

- 1 tsp lemon rind

- 1 tsp lemon juice

- 1 tsp orange rind

- 1 tsp orange juice

- 1 cup milk powder (can you skim)

- 1TBS psyllium husk

- 1/2 cup coconut + extra for coating

- 1/3 cup sultanas

METHOD:

Add the apricot syrup to the other dry ingredients and mix well.

The mixture will be sticky. Use WET HANDS to roll into balls, cover with extra coconut and place in the fridge.
