'Banana Choc Chip Cookies'

 

Ingredients:

- 2 cups oat flour (ground down oats)

- 1.5 cups rolled oats

- 1 tsp baking powder

- 1⁄2 tsp baking soda

- 1 tsp himilayan pink salt

- 1⁄2 cup organic coconut sugar

- 1⁄2 cup organic coconut oil

- 3⁄4 cup organic almond milk

- 1 whole banana sliced into small pieces

- 1⁄2 cup shredded coconut

- 1⁄2 cup organic 80% dark chocolate chips

 

Method:

Preheat the oven to 180 degrees Celsius.

In a bowl, combine all of the dry ingredients and mix well. Then add in all the wet ingredients (banana last) and mix well until it forms a thick mixture.

Line two baking trays with baking paper and evenly spoon out the mixture. Press down with a fork to form semi flat cookies. Place in the oven to cook for approx. 30 mins (or until brown).

 

Note: Leave them in the oven for less time if you want them to be soft and fudgy. Makes approx. 30 cookies (depending on how big they are).
