Beetroot & Pistachio Choc Fudge

INGREDIENTS:

- 1 large beetroot (skinned and finely chopped)

- 3 Tbs light coconut cream

- 1/2 cup cacao powder

- 1/2 cup coconut oil

- 1 tsp vanilla essence

- 3 Tbs maple syrup

- Handful of roasted pistachio nuts

METHOD:

Cook the beetroot in a pot of boiling water (or steam, or do it in the microwave), until it is soft and tender.

Place in a blender and process until as smooth as possible. 

Add the coconut cream and vanilla essence and continue to process until smooth. Add the coconut oil and maple syrup and again blend. Lastly, as the cacao powder and process in the blender until everything is well combined, smooth and of a 'smooth peanut butter' consistency. 

Spoon out onto a fudge tin lined with baking paper, and sprinkle with the roasted pistachio nuts. 

Place in the fridge to set for a few hours.

Cut into small pieces and share ONLY if you have to!

BEWARE - You cannot eat this in secret and get away with it, as your stained pink fingers will be a dead giveaway :)
