chicken curry with cauliflower fried rice

Ingredients (Chicken curry):

- 1kg chicken breast (cut into strips)

- 1/2 red chilli (finely chopped)

- 1 jar (450g) Tomato pasta sauce

- 1 tbs chopped coriander

- 1/2 tsp ground cumin

- 1 tsp ground coriander

- 1 tsp ground cinnamon

- 1 tsp garam marsala

- 1 tsp smoked paprika

- 1 clove of garlic crushed

- 1/2 capsicum (roughly chopped)

- 1 small onion chopped

- Salt & pepper to taste

- 100ml light coconut cream

Cauliflower fried rice:

- 1 whole cauliflower (processed into a rice texture)

- salt & pepper

- 2 green shallots

- Handful of button mushrooms

- 1 tbs parsley chopped

Herbed Yoghurt:

- 3/4 cup Natural Greek yoghurt

- Salt & pepper

- 1 tbs lemon juice

- Fresh coriander chopped

​

METHOD:

Put all of the ingredients for the curry into your slow cooker and set the timer for at least 5 hours (on low).

​

For the cauliflower fried rice, place all the ingredients into a non stick hot pan sprayed with some coconut oil and saute until browned and cooked through. 

​

Right before serving, combine the ingredients for the herbed yoghurt.
