Squid stirfry & baked zucchini chips
INGREDIENTS:
- 1 squid tube
- 2 cup mushrooms (sliced)
- 1 tsp fresh ginger sliced
- 1 Tbs soy sauce
- 2 green shallots (chopped)
- 1/2 chilli (chopped)
- 1 clove of garlic (crushed)
- Italian mixed herbs (to season)
- salt & pepper
- Squeeze of lemon to season
- 1 medium zucchini (chopped into chips)
- coconut oil
METHOD:
Cut the zucchini into chips and put under the grill. Spray with coconut or olive oil and season with italian herbs, salt & pepper.
Whilst zucchini chips are baking, cut up the remaining vegetables & slice the squid into rings.
Add the vegetables, garlic & ginger to a hot pan with a small amount of coconut oil and saute until they are just cooked. Add the squid and soy sauce to the vegetables and cook until squid turns white (be careful not to overcook as it will turn tough).
Remove the squid stirfry from the heat and put on a plate with the baked zucchini chips. Add a splash of lemon.
This recipe makes enough for 1 serving (adjust according to the number of people eating).
