'Ricotta & chive fritters'

INGREDIENTS:

- 1/4 cup organic spelt flour

- 2 Tbs coconut flour

- 1 Tbs chopped fresh basil

- 1 Tbs chopped fresh chives

- 1/2 cup ricotta cheese

- 1 whole egg

- Milk

- Salt & pepper to taste

 

METHOD:

Add the flour to a bowl and stir in the herbs.

Mix in the ricotta, beaten egg and enough milk so that the mixture turns smooth but NOT runny. Season with salt and pepper.

Spoon out the mixture into a hot pan sprayed with coconut oil and cook until brown on both sides.

Service with your choice of sides.
