cherry ripe bars
INGREDIENTS: Base
- 12 Medjool dates (pitted)
- 1 cup oats
- 2 Tbs cacao powder
Cherry layer:
- 1 cup fresh cherries (pitted and chopped)
- 1/2 cup desiccated coconut
- 1 Tbs coconut flour
- 1.5Tbs coconut oil
Choc topping:
- 200g organic dark chocolate
- 2 Tbs coconut oil
METHOD:
Combine all the ingredients for the base in a good processor and blend until combined. Then press firmly down into a lined brownie tin.
In a bowl combine all the ingredients for the cherry layer. Evently spread this mixture on top of the chocolate base, and press down firmly. Place in the fridge to set for 2 hrs. Once set, cut into bars.
Melt the chocolate and coconut oil together and cover each bar in the chocolate. Place in the fridge to set.
Makes approx 15 bars.
