Chilli Chicken Drumsticks

Chilli Jam

​

- 5 long red chillies

- 1 French shallot

- 3 cloves of garlic

- 1 Tbs chopped ginger

- 2 Tbs peanut oil

- 2 tsp sesame oil

- 60ml rice wine vinegar

- 2 Tbs fish sauce

- 90g brown sugar

- Chicken drumsticks

​

METHOD:

​

- Preheat the oven to 180deg

​

- To make the chilli jam:

Step 1:

Place the chilli, french shallot, garlic and ginger in a food processor and process until finely chopped.

​

- Heat the peanut oil and sesame oil in a large non stick frying pan over medium heat.

​

- Add the chilli mixture and cook, stirring until it begins to thicken and caramelise.

​

- Add the vinegar, fish sauce and sugar and stir to combine. Cook further until it begins to thicken.

​

- Then cover your chicken with the chilli jam and place in the oven to cook for 25mins (or until chicken is cooked through).
