Choc Slice with cashew cream

Ingredients: Base

- 2 cups Almonds (or any nut of your choice)

- 1/3 cup Cacao Powder

- 150g Sultanas OR 10-12 Medjool dates

- ½ cup Desiccated coconut

 

Cashew Cream:

- 1 cup cashews (soaked overnight)

- 2 tbs natural honey

- 1 tsp vanilla essence

- Juice of half a lemon

- 3 tbs coconut oil

 

Toppings of choice.

 

Method:

In a food processor blend the sultanas until they form a smooth paste (or as smooth as possible). Transfer this mixture to a bowl.

In the food processor then blend up the almonds and add this to the sultana mixture. Add in the remaining ingredients and mix well.

Line a slice tin with baking paper, spoon out the mixture and press down firmly to form a flat base.

To make the cashew cream, drain the cashews, add them to the food processor and blend until they form a smooth paste. Add in the remaining ingredients and combine well.

Evenly spread this mixture on top of the chocolate base, sprinkle with your choice of toppings and place in the freezer for an hour to set.

Makes approximately 20 small slices
