'Chocolate Sweet Potato Brownie'
Ingredients:
- 320g Sweet Potato (skin removed and cooked until soft)
- 2 tbs Muscovado sugar (unrefined cane sugar)
- 3 whole eggs
- 1 tbs macadamia oil
- 3 tbs almond meal
- 2 tbs organic cacao powder
- 1⁄4 tsp ground cinnamon
- 1⁄4 tsp baking powder
- pinch of salt
- 1⁄2 tsp vanilla essence
- 1/3 packet sugar free dark choc chips
Method:
Preheat the oven to 180 degrees Celsius.
Skin and steam the sweet potato until it is very soft, then place in a food processor and blend until it forms a smooth mash.
In a large bowl, combine all of the dry ingredients and mix well. Add the sweet potato and chocolate chips and stir until well combined. Let the mixture cool before adding the eggs (you do not want them to cook just yet). Either spoon the mixture out evenly into a brownie tin, or into a 12-pan muffin tray.
Cook in the oven for approx. 30 mins.
Makes approx. 12 brownies.
