mixed berry breakfast muffins

Ingredients:

 

- 2 cups of plain whole-wheat flour

- 3 tsp baking powder

- 1/2 cup coconut sugar (optional, can substitute with sweetener of choice)

- 2 Tbs rice malt syrup

- 1 egg

- 1 cup almond milk

- 1/2 cup natural greek yoghurt

- 1/3 cup coconut oil

- 2 Tbs buckinees

- 1 cup frozen organic mixed berries

- 1 tsp vanilla essence

 

Method:

Preheat the oven to 180 degrees celsius.

Place the flour, baking powder, buckinees and sugar in a bowl and mix well. In a separate bowl, mix the honey, egg, milk, yoghurt, oil and vanilla. Pour the wet ingredients to the dry ingredients and mix until combined. 

Stir through the mixed berries.

Spoon the mixture into muffin tins lined with paper cases and bake for 25 mins until cooked. 

Makes approx. 12
