paleo chicken schnitzel
Ingredients:
- Chicken breast cut into medium strips
- 1 whole egg
- 3/4 cup Almond Meal
- Salt & pepper
- 1tsp smoked paprika
- 1 tbs parmesan cheese
- Coconut oil for cooking

Method:
Combine the almond meal, salt & pepper, paprika and parmesan cheese in a small bowl and mix well.
In a separate bowl, crack the egg and lightly beat.
Dip the chicken strips into the egg and then cover with the almond meal coating.
Once all the chicken is well covered, heat a pan with the coconut oil. Lightly fry the chicken until cooked through and browned on the outside.
