baked quinoa encrusted chicken strips
INGREDIENTS:
- 1/2 cup quinoa flakes
- 1/4 cup parmesan cheese
- 2 tsp dried italian herbs
- 1 Tbs almond meal
- 1 egg (beaten)
- 1kg chicken
- Salt & pepper to season
METHOD:
Preheat the oven to 180 degrees celsius.
Add the dry ingredients into a bowl and mix well.
Crack & beat the egg in a separate bowl.
Dip the chicken into the egg, then roll in the dry mixture until well coated and add to a baking tray lined with baking paper.
Place to cook in the oven for approx. 20mins (or until chicken is cooked).
OPTION:
You may wish to pan-fry (instead of bake) the chicken in coconut oil, so that the crust is more crunchy!
Fun Nutritional Facts
This is a healthy and nutritious variation of the classic 'chicken schnitzel'. The quinoa flakes are a great source of low GI carbohydrates and protein. Baking the chicken reduces the amount of fat in the recipe, however, if you choose to pan fry, using a good quality oil ensures you are still consuming nutritious food.
