Salmon & Barramundi fish cakes

INGREDIENTS:

- 1 stick of lemongrass

- 6cm piece of ginger (grated)

- 1 bunch of fresh coriander (finely chopped)

- 1 fresh fillet of salmon (300g)

- 1 fresh fillet of barramundi (300g)

- 1 tsp chilli flakes

- 1 clove of garlic

- 1 green shallot (finely chopped)

- salt & pepper

METHOD:

Combine the lemongrass, ginger, coriander, chilli, garlic, shallot & salt and pepper in a large bowl.

​

Chop the salmon into small 1cm chunks (for texture). Blend the barrumundi up until smooth. 

Then combine the fish in with the remaining ingredients and mix well. 

Divide into even sized patties.

Cook in a non stick pan with some olive oil until cooked through and golden outside.
