Seaweed on toast
INGREDIENTS:
- 2 pieces of toast of choice (e.g. Burgen bread, paleo, ciabatta, soughdough etc).
- 1 serve of Seaweed salad
- 2 poached or soft boiled eggs
- 2 tsps cottage cheese
- Salt & pepper
METHOD:
Poach or soft boil your eggs (you may wish to fry or scramble, it is totally up to you).
Toast your bread, then spread the cottage cheese on top.
Add your seaweed and then place the eggs on top. Season with salt and pepper.

Fun Nutritional Facts
Seaweed is incredibly nutritious and is quite high in iodine, which is vital for thyroid health (our hormone control centre). Our body does not produce iodine naturally, so we have to source it from our food. It is ideal to try and incorporate at least one serving of seaweed into your diet/week (sushi does count).
