Soba Noodle Sauerkraut Sushi

INGREDIENTS:

- 90g soba noodles (cooked)

- 2tsp sesame oil (tossed through cooked soba noodles)

- 4 nori seaweed sheets

- 1 grated carrot

- Handful of snow peas (cut thinly lengthways)

- 1 cup Sauerkraut

- Mix 2Tbs goat yoghurt with 1tsp wasabi paste and stir through the Sauerkraut.

METHOD:

Evenly spread the soba noodles on the seaweed sheet.

On one end, place the carrot, snow peas and yoghurt Sauerkraut.

Roll up nice and firm, and cut with a sharp knife.

​

Serve with soy sauce and egg mayo mixed with wasabi for a great flavour hit.
