'Spiced apple bites'
INGREDIENTS:
- 1 cup oats (ground down to flour)
- 1 tsp ground cinnamon
- 1 tsp all spice
- 4 Tbs water
- 1/2 apple (skin removed and diced into cubes)
- Cinnamon sugar or coconut sugar (to roll balls in)
METHOD:
Preheat the oven to 180 degrees Celsius.
Add the first four ingredients into a bowl and mix until a dough forms.
Wrap apple cubes in the dough, place on a baking tray lined with baking paper, dust with sugar and place in the oven for 10 minutes rotating to cook on the other side.
Recipe makes approximately 20 balls

These nutritious balls are a great source of fibre (which helps maintain digestive health), are low GI carbohydrates and the cinnamon spice helps to manage blood sugar levels (decreasing that insulin spike, which can lead to the dreaded 'sugar crash').
