Sweet Potato Chocolate cake

INGREDIENTS:

- 1 sweet potato (300g) cooked until soft

- 20 fresh pitted dates (soaked in boiling water)

- 2 tsp vanilla extract

- 1 cup almond meal

- 1/2 cup buckwheat flour

- 3/4 cup cacao powder

- 1tsp baking powder

- 3 whole eggs

- Chocolate, berries, coconut or anything else you want to put on top.

METHOD:

Preheat the oven to 160 degrees.

Place everything in a food processor and process until combined.

Spoon out the mixture into a lined cake tin and place in the oven for approx 35 mins, or until cooked through.

Refrigerate, and once cool, top with chosen toppings.
