tofu burgers with tomato salsa

INGREDIENTS:

- 350g firm organic silken Tofu

- 2 large eggs

- 75g wholemeal breadcrumbs

- 1 Tbs Vegemite

- 1 large bunch of cherry tomatoes

- 1 bunch bok choy

- 1 Tbs red wine vinegar

- 1/2 handful fresh basil

- 2 sprigs of fresh rosemary

- Salt & pepper

 

METHOD:

Wrap the tofu in a clean tea towl and squeeze out the moisture. Place the tofu in a bowl and add the eggs, breadcrumbs, vegemite & salt and pepper. Mix together well and form burger sized patties. 

 

Halve the cherry tomatoes and place them in a fry pan with a little olive oil, splash of water, pepper and the vinegar. Cook until they soften and add the basil leaves and bok choy. Season with more salt & pepper if you wish. 

 

Lately, in a hot pan sprayed with oil, place the rosemary leaves into small piles and place the patties on top to cook until they are browned on each side. 

 

Recipe makes approx 5 patties.

Fun Nutritional Facts

 

Tofu is a great vegetarian alternative for protein. However, be sure to choose a good quality tofu and also avoid eating it all the time as it has been known to effect particular hormones within women.
