zucchini ricotta & protein pancakes
INGREDIENTS:
- 1 medium zucchini (grated)
- 2 large TBS ricotta cheese
- 1 scoop of PranaOn Primal Protein
- 1/2 tsp ground cinnamon
- 2 whole eggs
- (optional): Cottage cheese & honey for topping. OR toasted flaked coconut & berry campote.
METHOD:
In a bowl combine all of the ingredients and mix until well combined. If the mixture is too thick and gluggy (it shouldn't be), add some milk until it forms a smooth texture.
Heat a non-stick pan and evenly spoon out the mixture. Serve with your choice of toppings.
Makes 4 small pancakes.

Fun Nutritional Facts
Zucchini is a low calorie vegetable with a subtle sweet taste. It has a great nutritional profile which is abundant particularly within the skin (so it's great we keep the skin on for these pancakes!) It is a great source of vitamin C which helps protects our cells from free radicals.
Ricotta is a great source of calcium for strong bones and also promotes nail health.
