'zunana protein pancakes
INGREDIENTS:
- 1 mashed banana
- 1/2 grated zucchini
- 1 scoop of natural protein (I use PranaOn plant protein)
- 1/2 tsp ground cinnamon
- 1 Tbs coconut flour
- 2 eggs
- Milk of choice (enough until mixture is smooth but NOT runny)
METHOD:
Combine everything together in a large bowl and mix well.
Heat a non stick pan and spray with coconut oil. Spoon the mixture out into the size of pancakes you desire and cook on both sides.
Serve with whatever toppings you desire. I used strawberries and cottage cheese.
Fun Nutritional Facts
These pancakes are extremely healthy and nutritious for the body. They are rich in potassium from the banana, and vitamin C from the zucchini. Adding some peanut butter will make this the perfectly balanced meal of protein, carbohydrates and good fats.
